Soft Pretzel Recipe Anyone?

Hey everyone,

I am having a MAJOR craving. You know those soft pretzels with the sea salt that you can buy at the grocery store or at concession stands??? I want one (gluten-free of course).

Today, I made a delicious loaf of banana bread, so I satisfied that craving...but I have no clue how to make soft pretzels.

Any thoughts???

Edit: Just found a couple of recipes...has anyone tried one that turned out a success?

I just made this recipe below and it's fabulous! I had to change it slighty because the dough was way too dry and crumbly, it wouldn't roll without breaking--so I added 1 Tbsp oil and some water (approx 1/2-3/4 cup water, I'm not sure, I didn't measure). Let them cool 5-10 minutes after baking--the flavor is better than right out of the oven. I sprinkled them with salt. DH rolled one in a little butter (bad, I know), cinnamon, and sugar--tastes so good!

My DD's school is having soft pretzels as a snack tomorrow, and I am so excited that DD will have a soft pretzel, too. This was one of her favorite treats pre-diagnosis. I am just so happy because I never thought I would be able to make soft pretzels for her. Thank you, thank you for the recipe!

Thanks for bringing this thread back up! Soft pretzels were my dd's favorite treat too. We are currently trialling egg, so I can try this recipe!

The pretzels were fabulous last night, but the flavor and texture is not so good today. Microwaving didn't help, but toasting did. These are definitely best right out of the oven, but my DD did eat a whole pretzel at school today anyway. I froze the rest of them tonight, I plan to microwave and then toast them as needed.

When I was trying to make bagels following the recipe on the side of Pamela's Wheat Free Bread Mix, I also made a couple topped with sea salt and they tasted just like hot soft pretzels! So GOOD!! You could probably shape them into the pretzel shape too!

has anyone ever made a dough, or specifically a pretzel dough, without using Xanthan Gum? i see that the bacteria used to produce Xanthan Gum is fed corn so it can multiply and that people with corn allergies can experience problems when using it. My girlfriend is allergic to corn, soy, peanuts, and walnuts, along with wheat (but not gluten apparently).

I ran into this recipe on google after looking for wheat free pretzel recipes so she can share in the fun at our Oktoberfest party. i would appreciate anyone's input. Thanks!

I think that you could replace the xanthan gum with guar gum. It is a bean ground into a fine powder. A lot of people that can't tolerate the xanthan gum use guar gum. It's less expensive, too.

The guar gum was perfect! I now use that along with the brown rice, white rice or whatever flour we use. it even helped our gravy got extra thick! Thanks so much!

I just made these and they were very good. I also added water and oil prior to kneading, otherwise it was too powdery to stay together. They turned out really crunchy (slightly burnt) on the bottom though. Do you know how to avoid that? I just cooked them on a Teflon baking sheet

Thank you! I've been CRAVING good soft pretzels like nuts for weeks...brought on by my boyfriend who just had to have that Auntie Anne's pretzel. Now if I can just get my hands on some potato flour...

So I made the recipe with this option but rolling the pretzels was so frustrating. adding the oil and water sorta helped but they were still crumbly. and when I added more water they were too sticky.

Any suggestions???? Help would be much appreciated!

      Do you have online access to your celiac panel test results such that you could post them? tTG-IGG is kind of a secondary test. A weak positive in that one could indicate celiac disease but since it isn't as specific a marker as the tTG-IGA it is not real convincing. You could also have NCGS (Non Celiac Gluten Sensitivity) for which there is no test. Celiac disease must first be ruled out. It is 10x more common than celiac disease and shares many of the same symptoms. Some experts believe it can be a precursor to celiac disease. The antidote for both is the same: total avoidance of gluten.

      I haven't been on this forum for a long time, but it was absolutely wonderful during the diagnostic process!  My path for celiac disease diagnosis was the following: -Had normal IgA level, and my only serology positive test was the DGP IgG -Deficiencies in both Vitamins D and K that did not increase at first despite massive supplementation -Diagnosis of fat malabsorption both total and neutral -Diagnosis of severe exocrine pancreatic insufficiency (EPI) -Testing was completed to rule out causes of EPI, and the only one not ruled out was celiac. -Both traditional endoscopy and pill capsule endoscopy yielded negative results for biopsy confirmation, but my GI doctor said that both procedures simply could have missed the damaged spots. -EPI and fat malabsorption resolved after taking Creon for 6 months since my EPI was caused by celiac -23 and Me said I don't have either of the two prominent genes for celiac disease   Remember that you might not have 'textbook' symptoms, but you still may have celiac disease.   Also, I am SO incredibly grateful for this site for all the learning it has allowed me to do. I have a senior dog, and these last few weeks with her were very scary! After two hospital stays, she finally received an IBD diagnosis after having gastroenteritis and pancreatitis. I know that celiac disease is not IBD, however, through reading this site, I learned more about it. I was relieved when I found out she had IBD and not cancer this past Wednesday. I know IBD can be managed thanks to what I've learned here!  So celiac.com, not only did you help me, but you helped my pup too! Thank you ❤️

      It was tTG IGG that was flagged high. I'm not sure about the other stuff. I'm still eating my normal stuff.

      Thank you for your post, @Nedast, and welcome to the forum. It is interesting to read of your experiences. Although I've not had TMJ, from time to time I have had a bit of mild pain in my jaw, sharp stabbing pains and tingling in my face which appears to have been caused by issues with my trigeminal nerve.  I read that sometimes a damaged trigeminal nerve in coeliacs can heal after adopting a gluten free diet.  I try to keep out of cold winds or wear a scarf over my face when it is cold and windy, those conditions tend to be my 'trigger' but I do think that staying clear of gluten has helped.  Also, sleeping with a rolled up towel under my neck is a tip I picked up online, again, that seems to bring benefits. Thank you again for your input - living with this sort of pain can be very hard, so it is good to be able to share advice.
