After much stalling I finally did it! I made homemade chocolate chip cookies! The only thing I changed was the flour. I substituted gluten-free flour for the regular flour. I was surprised by how good they were. I am not sure you could tell the difference between mine and the ones made with flour. Now on to banana bread and sugar cut out cookies.

Congratulations! My first attempt at cookies, they spread out so much that I had to break them apart and they were so thin and crunchy...tasty, though. My second attempt this afternoon I baked in a cake pan, so chocolate chip cookie squares.
I've made banana bread a few times, my gluten-free son and non-gluten-free son & husband love it. It is becoming a staple at my house. I use the tiny loaf pans though, I got a better result with mini-loaf pans than regular.

congrats! it can definitely take some practice. the first time i tried to make a yeast bread i was so furious when it fell !!!

I figured this out by trial and error--when I make choc. chip cookies, I measure out the rice flour and then take out about 2 good tablespoons of the flour and replace it with potato starch. It seems to make the cookies more tender and they don't dry out as fast.
