When a recipe calls for gluten-free flour does it mean ANY g-f flour like rice or soy? Or is this a special type of flour?
Thanks.

usually you can use any kind of gluten free flour, but some recipes work differently with different gluten-free flours or it affects the taste... personally I like to buy Orgran's All Purpose gluten-free flour mix... they even have a self rising version for baking... Bette Hagman has a recipe for mixing your own all purpose mix, The Gluten Free Pantry sells one, Bob's Red Mill makes one, so does Kinnikinick and on and on...
