Full Version: Those No-bake Oatmeal Drop Cookies

I used to LOVE those no-bake, oatmeal "drop" cookies... we made them with cocoa and peanut butter... yum. What substitute would you use for the oatmeal? I was thinking that maybe I could use a quinoa or amaranth hot cereal subsititute for the oatmeal. Has anyone tried to recreate this kind of cookie?

I sure hope someone answers this. of course I never had any luck with the regular ones. We have a local bakery that makes the best but I never could come close. If you have a good recipe non-gluten-free I would like to have it. I still cook for others. Claire

I have made a lot of oatmeal-y stuff with quinoa flakes, so I can't see them not turning out. It's an easy recipe to halve - just make half the batch and see how it goes?

And on my Christmas baking schedule (haha, for real), I have a few cookies that I am trying new with quinoa instead of oatmeal. I have faith!
