I suppose I am hoping for too much...but I was wondering if any of you knew about a menu-mailer I could subscribe to that planned out gluten-free menus? It would be nice if they were also dairy and soy free too...

I don't know of a menu-mailer...but of some places to get those recipes you are talking of. And of two magazines that are a great resource and one that always has a lot of recipes. I can give details if you are interested.
