Good for Left over mashed sweet potatoes if you have them!
Sweet potato pancakes
1- 1/4 cup of Bob's Red mill all purpose gluten-free baking mis
2 tablespoons of sugar
1-1/4 teaspoon baking powder
3/4 teaspoon salt
2 eggs sligtly beaten
1- 1/4 cup milk or liquid dairy sub
1/2 cup cooked mashed sweet potatoes( cooled )
3 tablespoons of margarine or butter melted
Combine the dry ingridents in one bowl. In the ohter compine the wet and add to the flour mixture. Stir til slighty lumpy
Heat a heavy skillet or griddle over med heat, por 1/4 cup of mixture onto the pan
cook over med heat until pankcakes are golden brown.
makes 15 pancakes
