I have been gluten-free since diagnosed as coeliac in July 2004. One year on a follow up gastroscopy showed only partial healing. I continue to have D. Sometimes I am fine for up to a month or so and then for no reason I can fathom I am bad again. Specialist says he would have said I have IBS except that gatroscopy still shows coeliac damage. Apparently until I am healed I am not able to properly digest dairy, fruit and some vegetables which also trigger D. Can someone advise me on which of these could be safe to eat, as I just can't see any pattern.
I have my own toaster and am very careful with cross contamination. Can someone please explain about shampoo, moisturiser, etc - I don't have skin problems so are they still a concern? Also, twice in the last month I ate out for lunch and was told the food was gluten free but after 2 hours had severe bouts of vomiting that were quite frightening. Would this be gluten contamination?
Also, is white vinegar gluten-free? And what about Sushi - I have heard the seaweed used to roll the rice has wheat - is this so does anybody know? I am in New Zealand so things might be different here. Thank you for your help.
