When I was in Spain I wasn't gluten-free yet, but I don't think you'll have a problem. I think someone in Spain just created what's supposed to be
really good gluten-free bread, and they're apparantly going to start serving it in restaurants soon. You might want to look into that.
Other than that, I'd just make sure to bring a good dining card. If you eat seafood and paella, you should be alright.
