Welcome:
Wow, you were diagnosed in 2003 and is it safe to understand that you have not been on the diet?
Well, here's a start -- begin with meats, seafood, rice, potatoes, fresh veggies and fruit in as natural form as possible. Stick with just salt and pepper until you know what seasonings are safe.
Limit your dairy for a while or eliminate to until you have healed.
Make sure that your lotions, shampoos, lip balms and meds are gluten free. Stay away from gluteny toasters or get your own. Be careful with scratched up cooking ware, old wooden spoons and chopping blocks - gluten can hide anywhere.
