Hi, I'm 19 and just found out I have celiac four months ago. I'm back at school but since I don't have a kitchen or microwave, I've been living off of fruit, canned tuna and yogurt. Does anyone have any suggestions about other meals that don't need cooking or can be made with hot water(i have a electric kettle)? Anything would be great because i am getting so sick of all the ruffage (ie. fruit and lettace)! Thanks!

p.s. Also for those on a meal plan on campus - fight it. I can't eat anything in the cafeteria and though they were willing to make things special for me, I didnt want to pay ridiculous prices for the same limited stuff. I contacted the account office and had my doctor send them a note about my condition. They refunded half of my money! Make sure you try all options because it's possible to get money back.

Thai Kitchen dry soups (add hot water). Tyson pre-cooked chicken legs or whole chickens (if you don't have a fridge would have to eat in one sitting). Vienna sausage.

If your school has a domr with a kitchen you need to demand to move to that dorm.

I agree with Richard. Find out which dorm has at least a community kitchen and demand to be moved to that dorm for the spring semester. Find out who controls the disability policies and determine if you need to be classified as a 504 to get any action from the school.

Until then, hopefully you have a small fridge, try the George Foreman type grills. That will open up a lot of options like hamburgers, sausages, chicken, grilled veggies, etc. A microwave is great for canned veggies and baked potatoes. Lunch meat for sandwiches. Hopefully your school or roomate won't freakout because you are doing real cooking in your room.

I encourage you to add an electric skillet to your closet, so you can do some basic cooking in your room. Or possible a rice cooker (or steamer, which will cook rice and other items at the same time). Additionally, you might want to look into salads - bean salads and veggie salads and meats when you can get cooked meats at the store. Peanut butter and rice cakes are nice and fast too. ;-)
