wanting to make some apple butter, but all the recipes i have browsed have sugar, and i was going to start an elimination diet, wondered how i could make it without.

I make applebutter by just cooking down my homemade applesauce more.

In an oven at about 325/350, I mix together about 5 lbs. of apples, sliced (I leave the skin for nutrition, but it's up to you... And I think for the SCD you need peeled fruit?), about 2 1/2 c. apple cider, and cinnamon. Bake for about 1 1/2 - 2 hours, mashing when they get soft and then stirring occasionally til browned and rich.

I just take peeled, chopped apples, stick 'em in a pot with some water, and boil 'em down, down, down. when they start getting really low, you have to be very careful not to let them burn, keeping the heat low, and stirring constantly, and remember that it'll thicken a bit on cooling. But that's it. (I prefer not having cinnamon in my apple butter, but that's a personal taste thing.) Without the vinegar (or lemon juice or ascorbic acid), they'd turn color unless it's covered at the surface with plastic wrap.
